This weekend, while searching for eggplant breakfast ideas; I came across a recipe for vegan meatballs. Yes, I would eat vegan meatballs for breakfast. I would gladly put some maple syrup on them and you get the picture. 😂 😄 Suddenly I had to make them, it was like a itch that desperately needed to be scratch.

Here is the recipe for the “4-Ingredient Vegan Eggplant Balls”, provided by I decided to try out.

4-Ingredient, Vegan, Eggplant Balls | C it Nutritionally

4 Main Ingredient:

1 medium eggplant

1 garlic clove

1 shallot

3/4 cup bread crumbs (whole wheat if desire gluten-free)


I used panko bread; that was all I had in the cabinet. The recipe said to bake the veggies for 30-40 minutes; I choose to bake it for 40. I do think that 30 minutes would have been perfect. My eggplant was a little crispy. I also think I should have used more salt than the recommended amount. I thought it was good overall, the herbs used made it very delightful and enjoyable.

After trying the recipe I decided to search for other recipes. From chickpeas, seitan to zucchini, you too can enjoy some vegan meatballs.
